Give an open turkey sandwich a special twist with Spiced Cherry sauce! Roast turkey is a great lean source of protein any time of year, but this recipe really comes in handy for Christmas leftovers.
SPICED CHERRY SAUCE
In a small saucepan, sauté the onion in the olive oil until softened.
Add the brandy, vinegar, water, cinnamon and bay. Bring to the boil and add the cherry paste. Stir until the paste is dissolved.
Allow the sauce to simmer until slightly thickened (about 5 minutes). Remove cinnamon and bay and allow to cool.
Store in the refrigerator for up to 1 week. Perfect as an accompaniment to leftover Christmas turkey!

On a slice of fresh wholemeal bread layer Swiss cheese, lettuce, sliced tomato and roast turkey
Drizzle Spiced Cherry Sauce over the turkey and serve
