Roast the capsicum for approximately 40 minutes at 180C and allow to cool. Cut the eggplant in half lengthways and place on foil. Add garlic, black pepper, sea salt and olive oil. Wrap into a parcel, seal and bake in a slow oven (120C) for about two hours or until soft. When eggplant is cooked, scoop out the flesh and chop finely. Saute the diced spring onion and mushrooms in a little olive oil until liquid is gone from the pan. Whip the cream cheese in a food processor until softened, then add all remaining ingredients and process for 30 seconds to combine.
