'Dear Sam and the team, I would like to share a recipe I used on Good Friday for my family which included your long crackers which I purchased from Costco. Your crackers do take on a spoon shape at the wider end and so therefore that gave me the idea for a simple quick starter. YUM - the men in our family are not fancy blokes but they all asked for more.'

Ingredients

1 fillet side of salmon deboned/skin off

Manuka honey
-
Purchased dukka
-
Cracked black pepper
-
Dill
-
Mayonnaise
Method
-
Spread manuka honey over flesh of salmon - be generous

Sprinkle dukka on top

Sprinkle black pepper

Bake on 200C for 30 minutes basting often with the melting honey

Let cool

Cut salmon into 2cm squares

combine dill and mayonnaise
-
place some of the mayonnaise mixture on the wide end of the cracker and place the square of salmon on top.

Serve on a platter with the fat sides all facing in and the skinny sides as the handles facing out.
