1 x Australian ham on the bone (we like Barossa Fine Foods)
2 x 50g portions Tucker's Natural Spiced Cherry Fruit Paste
2 x 30ml nips Port/dry Sherry
20-30 dried cloves (optional)
Pre heat oven to 180C
Remove skin from ham and score a diamond pattern across the fat layer (Watch tutorial). Reserve ham skin and place ham in a large alfoil covered baking dish.
Remove Tucker's Natural Spiced Cherry Fruit Paste from packaging and add to small saucepan with Port/dry Sherry
Stir gently over low heat until Fruit Paste has melted and combined with Port/dry Sherry. Allow to simmer briefly then remove from heat.
Pour mixture over ham, covering entire surface. Spread with a pastry brush if need be.
Press a dried clove into each intersection of diamond pattern, if desired.
Bake in oven for 40-60 minutes or until ham surface is golden
TIPS: Cover ham with reserved skin, place in a 'ham bag' or pillow case soaked in water & vinegar and keep your ham in the refrigerator for up to a week. Sliced ham suitable to freeze.
